I think back to grainy footage of Neil Armstrong taking his first steps on the moon. The excitement that was in the air when President Kennedy spoke about the Space Program on television broadcasts. Man on the moon?? That was unheard of!
Things have changed since the space program in the late ‘60’s. We’ve really come a long way as human beings in a fairly short period. 44 years isn’t that long of a time. If you’re in your mid 20’s, just ask your mom or dad. It’s a middle aged person.

I’ve got a couple of request for my mother in law’s recipe for jerk chicken. It’s great because it’s super easy and cheap! It’s best when you use chicken thighs.

Jerk Chicken
2 tbsp. Garam masala
1 tbsp. Dried thyme
1.5 tsp. Cayenne pepper
1.5 tsp ground black pepper
1.5 tsp. Ground sage
¾ tsp ground cinnamon
2 tbsp. Minced garlic
1 tbsp. Brown sugar
¼ cup olive oil
¼ cup soy sauce
½ cup vinegar
½ cup orange juice
Juice of one big juicy lime
1 scotch bonnet pepper (green) finely chopped
3 green onions finely chopped
4 – 6 chicken thighs – remove the skin

Ok so it’s not ‘officially’ summer, but the weather is warmer and we can actually go outdoors. I love when the weather gets nice, you can take a walk, drive with the windows down or take your bike out. The downside is you realize just how out of shape you are! That happened to me. I went on a short bike ride, half hour or so. The following day I’ve got pains where I never thought I would. My tail bone hurts me when I cough! But when it’s all said and done, it’s exercise! No pain, no gain right?!
The one thing I don’t get is the Ebike. I also don’t understand how the government hasn’t found a way to tax them with a license plate, or some kind of tag. For starters, they’re pretty quiet, so when one does pass you, you’re kind of shocked, ‘what the hell ...
